Pav Bhaji is a spiced, mashed veggie dish that is served with toasted, buttered rolls, chopped onion and squeeze of fresh lime. It is a popular street food you'll find on the streets of Mumbai. The perfect, flavorful vegetarian/vegan dish.

Ingredients
1 tbsp oil
- 2 tbsp butter, divided
- 1 large white or yellow onion, finely chopped
- 1 tbsp garlic, crushed
- 1 tbsp ginger, grated
- 1 red or green bell pepper, chopped
- 3 roma tomatoes, chopped
- 2 large potatoes, peeled and chopped
- 1 cup cauliflower, chopped
- 1 medium carrot, chopped
- ¾ cup green peas
- 1 cup of water
- 2 tbsp Pav Bhaji Masala by The Spice Collective
- 2 tsp salt
- 2 tbsp tomato paste
⅓ cup cilantro, chopped
- 2 limes, quartered
- ½ red onion, finely diced
- Dinner rolls or buns, sliced

Directions
Instant Pot Method
Using the “Saute” setting on the Instant Pot, heat oil and 1 tbsp butter. Add chopped onion, garlic, ginger, and bell pepper. Saute until the onion is translucent.
- Add tomatoes, potatoes, cauliflower, carrot, peas, salt, water, and Pav Bhaji Masala. Mix well to incorporate the ingredients and spices.
- Close and lock the Instant Pot lid, set to “High Pressure” for 6 minutes.
- Once the timer goes off, press “Cancel”, allow steam to release naturally for 10 minutes then manually release remaining steam by opening the vent, remove lid.
- Select the “Saute” setting, using a potato masher, mash the veggie and spice mixture (bhaji). Add tomato paste and 1 tbsp butter, stir well to incorporate.
- Loosely cover the pot with lid to avoid spattering, after 5 minutes stir to ensure the bhaji doesn’t stick to the bottom. If the bhaji looks a little watery, cover the pot and let the bhaji cook for another 5 minutes, add additional salt or spice blend to taste. Turn off Instant Pot and add chopped cilantro.
- Heat a pan or griddle over high heat, spread butter on both sides of the buns (pav), decrease heat to medium, toast buns on both sides until brown.
- Serve bhaji on a plate, with toasted buns. Top bhaji with a squeeze of lime and chopped red onion.
Stovetop Method
Add potatoes, cauliflower, carrots, and peas to a pressure cooker. Pour 1 cup of water so vegetables are partially covered
- Pressure cook until you hear two whistles. Allow pressure to release naturally, open lid when released. Mash the vegetables with a potato masher until smooth
- In a large pot, heat oil and 1 tbsp butter on medium heat. Add chopped onion, garlic, ginger. Saute until the onion is translucent.
- Add bell peppers, tomatoes, tomato paste, and salt, continue sauteing for five minutes until tomatoes are soft
- Add Pav Bhaji spice blend, mix well and continue cooking for 2-3 minutes
- Add mashed vegetables, mix well and simmer for another 10 minutes to allow the flavors to meld, add additional salt or spice blend to taste.
- Turn off heat, add chopped cilantro
- Heat a pan or griddle over high heat, spread butter on both sides of the buns (pav), decrease heat to medium, toast buns on both sides until brown
- Serve bhaji on a plate, with toasted buns. Top bhaji with a squeeze of lime and chopped red onion.
